Hi everyone! I’m back. Been doing a lot of great things. I know that it is super difficult to get in all the servings of vegetables we need. This is really tough if you work most of your day. I’ve tried and proven a couple of recipes to be great tasting and easy ways to eat healthier.
1: Radishes
Yes honey!!Did I just say radishes. Well if you season and roast radishes they taste like potatoes. They are a great substitute. Here’s what you do…
Take either 2 bags of radishes or however many you want to make and cut the roots off. Next, rinse them. Place them in a glass baking dish and toss them with olive oil. Season them with your favorite seasoning. I used basil, onion powder, salt and pepper. Then cook them on one side for 20 minutes. Flip them over and bake for another 15-20 minutes until tender.
